I built some furniture with cheap 2x4. those with a lot of chips. Is there a good way to seal? Varnish? Polyurethane? Good old latex paint? Water-based paint?

In praise of old beams
The stud and bend bracing in between are 2x4's--actually 2 inches by 4 inches. They don't come that way any more (being milled when the wood is green, it shrinks down to about 75 percent of its first size). The studs are all sash sawn.
